6 veggie salad…yummy!

I got inspired by this recipe online
Loaded cauliflower couscous salad with roasted turmeric chickpeas

I’m so going to make this salad one day but today I didn’t feel like roasting the cauliflower and chickpeas and I didn’t have all the veggies for it. So I made up my own from veggies I did have!

1/2 cauliflower broken into florets
1 carrot shredded or sliced thinly
4 Radishes sliced
10 Cherry tomatoes sliced
1/2 English cucumber chopped
1 head romaine lettuce chopped into pieces
1 handful of fresh cilantro & mint chopped
1/4 cup pumpkin seeds

1/4 cup rice vinegar
1 Tbsp peanut butter (raw, unsweetened if possible)
1 Tbsp sugar (any you like, or even honey)
1/2 cup water

In a large bowl grate your cauliflower so that it looks like small grains, then add in all your other veggies – feel free to add others or omit ones you don’t like. Toss everything together, set aside and make the dressing.
Mix all the ingredients for the dressing, whisk well and pour over your salad just before serving.

Such a fresh salad, love the dressing how it accents all the flavours.  The beauty of this recipe is that you can add in anything you want. Here are some other ideas I would add in:

Dried Cranberries
Sesame seeds
Sunflower seeds
Snap peas
